An assemblage of clones MV6 Pinot Noir from the Mount Gisborne vineyard at Macedon, alongside Pinot clone D5V12 from Chanter’s Ridge at Woodend. A mix of whole bunches and gently destemmed fruit are treated to a traditional, wild indegenous yeast open top ferment, hand plunged thrice daily, befor pressing to French oak hogsheads for completion of malolactic and fourteen months maturation. An expansive Pinot style which continues to unravel as it evolves, caraway and sensen, spiced cherries and char, a floor of forest buds, enoke and fragrant sasafras oak.

The production of Methode traditionelle has been an essential part of the winemaking at Blue Pyrenees for many years, the original raison d'être. Established 1963 by the Champagne houses of Charles Heidsieck and Krug, an adherence to the transcendent French influence of the founders is central. In 1992, the Blue Pyrenees team decided to experiment with hand picking their fruit, under floodlights, in the middle of the night. The results were amazing, a most memorable vintage of outstanding quality, Midnight Cuvée was born.

Blue Pyrenees was established as Chateau Remy in 1963 by Remy Martin of France and has since become well known for their Bordeaux styled Cabernet Sauvignon. The estate was developed under advisement of the great Colin Preece and Maurice O'Shea's Hunter Valley management team. Victoria's Pyrenees have since become renowned for statuesque Cabernet wines, displaying great complexity, superior concentration and definitive regionality. Very few viticultural precincts in Australia can lay claim to doing Cabernet so very well and so consistently.

Black Jack was a yankee sailor who jumped ship and joined the Castlemaine goldrush of the1850s. He remains a part of local follore. The McKenzie and Pollock families named their property after the adjacent road which commemorates the legend of Mr. Jack, planting vines on the site of an old apple orchard in the 1980s. Redolent of spice and savoury fruits, sweet and juicy on the palate, filled of plums and ripe dark berries over a backbone of fine, sweet and toasty American oak, opulent and lingering, the defining articulation of Bendigo Shiraz.

Block 6 always displays savoury Rhone structure and style, as opposed to the identifiably Aussie genre of Shiraz produced by Blackjack Vineyard.

Pyrette is sourced from an impeccably positioned and managed vineyard near Colbinabbin on the Mount Camel Range. This special and unique individual parcel of vines which provides fruit is planted to the highest block over deep red, rocky Cambrian soils on a cooler easterly facing slope. The picking date is carefully assessed to capture a singular vibrancy and freshness in the fruit while retaining the mouthfilling richness and palate length so distinctive of Heathcote Shiraz. Production is limited to a precious 350 or 450 dozen each vintage.

There's good, there's better and there's Bests. The first Shiraz vines at the estate's St Andrew's vineyard were planted in 1930. The cuttings were sourced from the original 1860s plantings of Concongella Shiraz. Today these vines are still robust, producing intense spicy berries. A backbone of fruit from St Andrews is assembled with a component of good Shiraz grapes from the younger Salvation Hills site in the Grampians.

Outstanding Langton's Classification. Thomson Family Shiraz is produced from Henry Best's original 1866 plantings, only ever made in exceptional years, on average about six times a decade. The vines are cropped at less than two tonnes per acre and are meticulously hand harvested, selected and sorted. Thomson Family Shiraz was first made in 1993, one hundred years after the Thomson family settled in the area. It is produced predominantly from the fifteen rows of vines planted by Henry Best, referred to as Hermitage by Henry in his daily journal.

A compilation of several blocks Great Western Riesling, treated to the luxury of a wild indigenous yeast ferment in a single, extravagant 2500 litre French oak foudre, coopered at the Burgundy barrel works of Marc Grenier. Candidate parcels of fruit must exhibit the wanton opulence of floral nectars and honeyed sweetness before entering the Frankish Foudre, its slowly fermenting juices coalesce into a full flavoured Riesling wine with the grainyness of oatmeal and autolysis of oak, roman nougat and spice, magnificently gingered with bickford lime and crisp acid finish.

Amongst the many priceless bequeaths which are part of the Bests portfolio, are an 1868 planting of Pinot vines, probably established with a view to formulating luxury sparklings in the style of Champagne. A small parcel of Pinot Noir amongst the mostly Pinot Meuniere, later identified as a historically significant mix of Swiss and French clones, may very well be the oldest productive Pinot Noir vines in the world today. A pure bottling of these invaluable heirlooms, redolent of strawberries, powerful and intense, old vine Pinot of extraordinary elegance and finesse, silky of tannin and persistent in length.
